Easy Peazy whatever fruit you have breakfast oat cake

*I rule at coming up with names for the foods I invent – Nailed it!

These cakes are super simple and loved by my kid and I! You can bake them in muffin pans, pie pan, bread pan, casserole dish or whatever you have that can hold batter and go in the oven. The batter can be prepared in the short time it takes the oven to preheat. Total prep/cook time is


  • 1 cup – Kodiak Power Cake Batter
  • 1 cup – Oats
  • Egg whites or eggs
  • Berries, Apples, Bananas, Even Jelly or whatever fruit you want
  • *Lemon Flavor – *Key ingrediment! – Small pour
  • Vanilla – one….small pour….say “boop” as you pour to ensure amount


Prep Time – One hour from start to eat

  • Pre-heat oven to 350~F
  • Process fruit
    • Shred apple with shredder
    • Shred Carrot with shredder
    • Mush banana with whatever
    • put jelly in the mixing bowl
    • rinse frozen berries
    • etc…etc…etc…
  • Frisk / Mix / Bat eggs, fruit, vanilla and lemon flavor
  • grease whatever your baking in with the coconut oil and dust with pancake batter and/or oats
  • add pancake mix
  • add oats
  • pour in whatever your baking in
  • bake for 40 minutes
  • cool for 10 – *especially let banana bread cool
  • add whatever you like on top for sweetness – honey, peanut butter, maple, cinnamon and sugar

They vary due to what fruit you put in and if you add sugar.

whole cake -very big piece

  • Calories – 1000-1200
  • Protein-65g
  • Fat-10g
  • Carbs-114g not including fruits carbs

Per 1/4 cake -big piece

  • Calories – 250-300
  • Protein-16g
  • Fat-2.5g
  • Carbs-29g not including fruits carbs

Per 1/6 cake -medium piece

  • Calories – 170-200
  • Protein-10g
  • Fat-1.7g
  • Carbs-19g not including fruits carbs

I am a single mother in college who usually works full time to support my kid on my own so I don’t have a lot of time for frilly baking endeavors! However, I do love baking! I like to eat as healthy as possible and make sure my son is also very well fed because let’s be honest – A well fed kid or a kid who eats nutrient dense foods that are conducive to healthy brain growth equal a less annoying kid! And often times even a very pleasant one! (Humor)

So the goal is to get the kid to eat foods that are good him or her! That means they gotta taste good. Hence the lemon flavor in this recipe – that is actually what makes this cake so great even without toppings it has a nice flavor. The berry or Strawberry one is my favorite it’s a little tangy.

It also has to be easy af to make, and quick because if your anything like me, we don’t have time to be dicking around in the kitchen all morning. That’s another reason this cake is awesome! It’s so easy in fact , by the time you oven is done pre-heating (10/15) minutes your ready to stick it in the oven! I can even make this cake on school days!
